Chocolate Protein Mug Cake

Ingredients:

4 tsp cocoa powder
1/4 cup + 2 tbsp flour
2 tbsp Chocolate Peanut Butter Whey Protein Powder
1/4 tsp salt
1/2 tsp baking powder
2 tbsp sugar
2 tbsp vegetable oil
1/4 cup + 2 tbsp milk of choice
1 tsp pure vanilla extract

Directions:

Whisk everything together in a microwavable mug.
Microwave on high for 30 seconds – 1 minute. Check the cake after 30 seconds.
The cake will rise, then fall. Just make sure it doesn’t get overcooked or explode.

Chocolate chip cookies

Ingredients:

1 c Almond meal
1/3 c carob chips
1/4 c coconut oil- melted
1/4 c ricotta cheese
1 scoop About Time Chocolate whey protein
2 T cocoa powder
1 T coconut flour
1 T vanilla extract
3 pkts Stevia
1/4 t salt
1/4 t baking soda

Directions:

Preheat oven to 350 F.
Mix dry ingredients into a bowl.
In a separate bowl mix together the rest of ingredients. Add to the dry ingredients and fold together.
Scoop, roll into a ball and press with the palm of your hand. Yields 20 cookies.
Bake 8 minutes.

Protein Ice Cream

Ingredients:

2 14 oz cans coconut milk
1-4 scoops of protein powder (your fave flavor)
1-2 tbsp stevia
1 tsp vanilla extract

Directions:

Place a large deep pan in the freezer.
Blend coconut milk until smooth and creamy. Add your protein powder and granulated sweetener until thick and creamy.
Transfer protein ice cream to the pan and put it into the freezer.
Thaw for 10-15 minutes before eating.
To enjoy it soft serve style, let it thaw to desired texture.
